Our chefs' knives come in either full tang with copper liners, or hidden tang with a copper bolster. In the full tang range we have blade lengths of 10", 8", 6" and 4".
In the hidden tang range we have blade lengths of 10", 8", 6" and 5". The blades are made of forged EN42J steel (HRC59-61), and the handles come in a choice apple from local orchards or locally sourced walnut, with copper pins or bolts. We also make a large cleaver. We can make sheaths for the 10", 8" and 6" knives. |
The Bunka is the only Japanese blade that we make, but we have given it a western style handle, which can be either full tang with copper liners, or hidden tang with a copper bolster. The 7" blade is forged EN42J steel (HRC59-61), and the handle comes in a choice of apple or walnut with copper pins or bolts. We also make a mini bunka with a 5" blade.
